Have Higher weight stats and Slightly higher Harvest stats
If you Soul Trap the Quetz or Doed it will reset them and make them require a saddle
They harvest: -Stone -Wood -Crystal -Obsidian -Metal -Element nodes -Corpses -Everything other then whats listed below
They Do Not Harvest: -Berries -Fiber
